Butternut Squash Tart

Looking for an amazing & easy fall recipe?

You'll need:
1 butternut squash (1.5 - 2 pounds) cubed
1 4 oz package goat cheese
1 large onion (I used white)
1 refrigerated pie crust
sea salt/coarse salt

Crazy easy:
*Heat oven to 500.
*Toss cubed squash with 1 tbsp evoo & sea salt.
*Roast 12 minutes, toss/mix, roast for 12 more minutes.

*While this is roasting, sautee your onion until it gets nice & caramelized.

When squash & onions are ready...

*Place pie dough in pie dish.
*Poke bottom of pie dough with fork.
* Spread caramelized onions over crust. Top with roasted butternut squash.
* Sprinkle goat cheese over top.
* Fold crusts in to cover about 1/3 of top 
* Bake for 35 minutes on 350.

Pairs perfectly with spinach side salad.
 So absolutely easy & delish!
